Blanco Niño was founded after its creator set out to recreate the true taste of Mexican corn tortillas, travelling across Mexico to learn traditional techniques firsthand. Returning to Ireland, he established one of Europe’s first authentic tortillerias, rooted in nixtamalisation — an ancient process that transforms whole corn into deeply flavourful masa over several days.
